This list consists of three parts. First, you’ll read a recipe for chicory stew with chorizo, then you’ll read how to pickle onions, and finally you’ll find a recipe for orange curd dessert.
Endive stew with chorizo
- Main course for 4 people
- Preparation: about 30 minutes
ingredients:
- 1 kilo of potatoes, lightly crushed
- Salt and Pepper
- 130 gr. Chorizo
- 2 leeks
- 1 head of dandelion
- 4 eggs
- 30 gr. ghee
- 75 ml of whole milk
Additional supplies: pestle
How to prepare:
Step 1: Peel the potatoes and cut them into equal pieces. Place them directly under water, add a pinch of salt, and cook for about 20 minutes.
Step 2: Remove the skin from the sausage and cut it into small cubes.
Step 3: Heat a frying pan. Fry the chorizo in its own fat until crispy. Remove the chorizo from the pan and reserve the oil.
Step 4: Peel the leeks, cut them into rings, and fry them in chorizo oil until crisp.
Step 5: Wash the endive and cut it into slices.
Step 6: Boil the eggs for 4-6 minutes, then rinse them with cold water and peel them.
Step 7: Drain the potatoes. Allow it to steam briefly and then mash it with the butter and milk until it turns into a puree. Season with salt and pepper.
Step 8: Stir in the chicory.
Step 9: Divide the puree between plates and finish with the chorizo and shallot crumbles. Half the eggs and put them on the plate.
Pickled onions

- Preparation: about 15 minutes + a week of incubation
ingredients:
- 300 gr. Pearl onions or small leeks
- 1 tablespoon pepper
- 1 tablespoon mustard seeds
- 2 tablespoons of sugar
- 250 ml of water
- 300 ml of natural vinegar
- salty
- 2 bay leaves
Additional supplies: A clean 2-litre jug or two 1-litre jugs
How to prepare:
Step 1: Cleaning onions.
Step 2: Place pepper, mustard seeds, sugar, water, vinegar and salt in a saucepan.
Step 3: Bring to a boil and stir until the sugar and salt dissolve.
Step 4: Place the onions in the jar, then pour the vinegar mixture over it, then close the jar.
Step 5: Leave it for at least a week and then it is ready to use. Store it in the refrigerator.
Orange curd dessert
- Dessert for 4 people
- Preparation: about 15 minutes
ingredients:
- 2-3 handfuls of oranges
- 4-6 dried figs
- ½ teaspoon ginger spice
- 50 gr. Sliced almonds or almond pieces
- 2-3 tablespoons of orange jam
- 400 gr. Low-fat quark
How to prepare:
Step 1: Peel the orange, cut into slices between the membranes.
Step 2: Cut the figs into pieces and mix them with orange spices and ginger.
Step 3: Toast the almonds until lightly browned in a dry frying pan.
Step 4: Add the marmalade to the cheese and pour it into bowls or portions.
Step 5: Pour the orange salad on top and sprinkle with almonds.
