White asparagus with bourre noisette sauce and potato gratin

Today’s menu consists of two parts. We start with asparagus with beurre noisette sauce and then you will find out how to make potato gratin.

White asparagus with bourre noisette sauce

  • Main course for 4 people
  • Preparation: about 40 minutes

ingredients:

  • 1.5 kg of fresh white asparagus
  • Salt and Pepper
  • 1 wand piece
  • 1 lemon
  • 150 grams of butter
  • 1 tablespoon of mustard
  • 2 tablespoons of white balsamic vinegar
  • 2 tablespoons of capers
  • A splash of neutral oil
  • 1 bunch of chives
  • 200 grams of pork chops, cooked or grilled

How to prepare:

Step 1: Peel the asparagus with a vegetable peeler, reserving the skin. Cut 2 to 3 cm from the bottom.

Step 2: Cut a slice of lemon.

Step 3: Bring the asparagus under the skin with the lemon wand, lemon slice and a good pinch of salt to a boil in a large pot of water. Cook for two minutes, then turn off the heat. Leave it for another 10 to 15 minutes, and then the asparagus will soften completely.

The fourth step: Heat the butter in a saucepan and let it lightly brown for 5 minutes until it smells nutty, then you have a “purée noisette”.

Fifth step: Mix mustard, vinegar and lemon juice in a bowl. Add the puree noise in a thin stream while whisking, until you get a bound dressing.

Sixth step: Dry the capers with kitchen paper. Heat a little oil in a frying pan and fry the capers until crispy.

Seventh step: Chop the chives.

Eighth step: Place the asparagus and ham on a plate and pour over the mullet sauce.

Step 9: Sprinkle with capers and chives.

Potato gratin

  • Potato platter for 4 persons
  • Preparation: 15 minutes + 1 hour oven

ingredients:

  • 1 kg of waxy or slightly soft potatoes
  • 60g gruyère or aged cheese + extra for sprinkling
  • 175 ml whipped cream
  • 175 ml of milk
  • Nutmeg
  • Salt and Pepper
  • 30 grams of butter

Extra need:

  • Food processor with chopping knife or mandolin
  • grater
  • Oven tray or baking dish

How to prepare:

Step 1: Heat oven to 180 ° C.

Step 2: Peel the potatoes and cut them into thin slices using a food processor or a mandolin if needed.

Step 3: Cheese grate.

The fourth step: Mix whipped cream, milk and nutmeg in a bowl. Season with salt and pepper.

Fifth step: Mix the potatoes.

Sixth step: Grease a baking tray or pan with fat and arrange the potato slices with a little cheese between them in the baking dish or pan.

Seventh step: Bake the potato gratin in the oven for about 45 minutes. We take out the dish from the oven, sprinkle the potatoes with cheese and spread the knobs of butter on the dish.

Eighth step: Bake in the oven for another 15 minutes, until the potatoes are cooked through.
